Ingredients
Onion
Shallot · 1:1. Milder. Use a little more if you want the same bite.
Onion powder · 1 tsp per onion. Only when the onion was there for flavor, not for bulk.
Method
- 1
Heat the oven to about 350°F, or 350 to 385°F.
- 2
Use 1 pound chicken, and 3 to 4 chicken thighs.
- 3
Cook the pepper, the mushrooms, the jalapeño, the chilies, and the onion about 4 to 5 minutes.
- 4
The green pepper is less than 1/2 cup. The two mushrooms are less than 1/2 cup.
- 5
Mix in the chicken, the spinach, and the first half cup of each cheese.
- 6
A half cup of the cheddar and a half cup of the mozzarella go in the filling. A half cup of each goes on top. That is the same cup of each, not a second cup.
- 7
Roll that in the nine tortillas. That is all the pan held.
- 8
Melt the butter, stir in the flour, and do not cook that more than a minute.
- 9
Stir in the broth.
- 10
Add the sour cream and the cream cheese and cook about another minute.
- 11
If there is no cream cheese, use a full cup of sour cream instead of the 1/2 cup. Do not use both.
- 12
Pour the sauce over the enchiladas.
- 13
Mozzarella goes on, then cheddar, then jalapeño.
- 14
Bake 20 to 25 minutes.
- 15
Spinach, onion, olive oil, hot sauce, and chives go in.
- 16
Do not add salt. The chicken and the broth are already salty.
- 17
More pepper is fine.
- 18
Jalapeño powder or ghost pepper can go in.
My notes
Only you can see these. A reminder to add lemon, or hold the chile.
