Ingredients
garlic
Garlic powder · 1/8 tsp per clove. A clove you do not have. Not a match for roasted garlic.
onion
Shallot · 1:1. Milder. Use a little more if you want the same bite.
Onion powder · 1 tsp per onion. Only when the onion was there for flavor, not for bulk.
Method
- 1
Heat the broiler. If the skewers are wood, they should already be soaking.
- 2
Stir the jerk seasoning, the brown sugar, the oil, and the garlic. Squeeze in half the lime.
- 3
Cut the chicken into big bite-size pieces. Toss it in the mix. Rest 15 minutes.
- 4
Cut the pepper, the onion, and the pineapple into chunks about the size of the chicken.
- 5
Thread chicken, pepper, onion, and pineapple on the skewers. Leave a little space so the heat can get in.
- 6
Broil, turning once, until the chicken is cooked through and the edges char, about 10 to 12 minutes.
- 7
Rest 3 minutes. Squeeze the rest of the lime over them.
Cook's notes
A jar of jerk seasoning is the weeknight path. Fresh Scotch bonnet is hotter than most families want. Taste the jar. If it is already salty, do not add salt. Wood skewers need a 20 minute soak or the tips burn. Thighs stay juicy under a broiler. Breast dries out.
My notes
Only you can see these. A reminder to add lemon, or hold the chile.
