Ingredients
Bacon
Smoked paprika and olive oil · 1/2 tsp paprika per serving. You get the smoke, not the fat. Add oil if the pan is dry.
Turkey bacon · 1:1. Still cured. Not a low-sodium swap.
Broth
Vegetable broth · 1:1. Same salt problem as any carton. Taste before you salt the pot.
Water plus a bay leaf and onion · 1:1. Better than an oversalted cube when you are watching sodium.
Milk
Unsweetened soy or oat milk · 1:1. Oat milk is the calmer choice in coffee and sauces.
Water plus a spoon of oil · 1 cup water + 1 tsp oil. Only when milk is just there for moisture.
Heavy cream
Full-fat coconut milk · 1:1. Best in soups and curries. It tastes like coconut.
Evaporated milk · 1:1. Closer to cream in mashed potatoes than a thin milk is.
Butter
Olive oil · 3/4 the amount. For the pan, not for flaky pastry.
Coconut oil · 1:1. Adds a faint coconut note when you bake.
Applesauce · half the butter, in baking. Cakes stay softer and a little denser.
Salt
Half the salt, then taste · start at half. Acid, garlic, and pepper do more than a salt substitute.
Method
- 1
Cook the bacon until the fat renders. Lift it out and crumble it later.
- 2
Soften onion and celery in the fat with the butter. Add garlic and thyme.
- 3
Add potatoes and broth. Simmer until a cube of potato breaks with a spoon, about 15 minutes.
- 4
Stir in milk and cream. Warm it through. Do not boil.
- 5
Salt, pepper, and the bacon on top.
Cook's notes
Don't boil it once the cream is in. A simmer keeps it from splitting.
My notes
Only you can see these. A reminder to add lemon, or hold the chile.
