Ingredients
Onion powder
Shallot · 1:1. Milder. Use a little more if you want the same bite.
Onion powder · 1 tsp per onion. Only when the onion was there for flavor, not for bulk.
Garlic powder
Garlic powder · 1/8 tsp per clove. A clove you do not have. Not a match for roasted garlic.
Cornstarch
Flour · twice as much. Cook it a minute longer so the flour taste goes away.
Baking powder
Baking soda plus cream of tartar · 1/4 tsp soda + 1/2 tsp cream of tartar per 1 tsp powder. Mix it and use it now. It does not keep like a tin of powder.

Method
- 1
If the steak is not already cubed, cover it and beat it thin.
- 2
Stir the flour with 1 tbsp onion powder, 1/2 tbsp garlic powder, the seasoning salt, the cornstarch, and the baking powder.
- 3
Whisk the milk, the egg, 1 tbsp onion powder, 1 tbsp garlic powder, the pepper, and the ranch.
- 4
Dip the steak in the milk, then in the flour, then in the milk again, then in the flour again.
- 5
Heat the oil to 325°F, enough to cover the steak.
- 6
Fry about 3 to 4 minutes on each side, until the crust is brown.
Cook's notes
Serve it with country gravy you already have. This page does not give the gravy.
