Ingredients
garlic
Garlic powder · 1/8 tsp per clove. A clove you do not have. Not a match for roasted garlic.
onion
Shallot · 1:1. Milder. Use a little more if you want the same bite.
Onion powder · 1 tsp per onion. Only when the onion was there for flavor, not for bulk.
Method
- 1
Cut the chicken into big bite-size pieces. Toss it with the yogurt, half the salt, half the garam masala, the turmeric, the chili powder, the cumin, the coriander, the garlic, and the ginger. Rest 15 minutes.
- 2
Rinse the rice. Cook it with the rest of the salt and 2 1/4 cups of water, covered, on low, 15 minutes. Rest off the heat.
- 3
Melt the butter in a wide pot. Cook the onion until it is soft, about 6 minutes.
- 4
Add the tomato paste. Cook 1 minute, until it darkens a little.
- 5
Add the chicken and the yogurt clinging to it. Cook until the outside is no longer pink, about 5 minutes.
- 6
Pour in the crushed tomatoes. Simmer gently until the chicken is cooked through and the sauce thickens, about 15 minutes.
- 7
Take the pot off the heat. Stir in the cream and the rest of the garam masala. Scatter the cilantro. Rice on the side.
Cook's notes
This is the weeknight pot, not a tandoor. Thighs stay soft. Breast dries out. Do not let the spices scorch or the sauce tastes bitter. Stir the cream in off a hard boil or it splits. Garam masala goes in at the end, or the smell cooks off. A jar of curry paste is a different dish. This one is mild.
My notes
Only you can see these. A reminder to add lemon, or hold the chile.
