Ingredients
lemon juice
Lime · 1:1. Same acid, a different perfume.
Vinegar · half as much. Add it at the end. It is sharper than lemon.
cornstarch
Flour · twice as much. Cook it a minute longer so the flour taste goes away.
Method
- 1
Heat the oven to 425°F.
- 2
Stir the flour, 1 teaspoon of the salt, and 2 tablespoons of the white sugar.
- 3
Cut the cold butter, the full cup, into the flour until the pieces are the size of peas.
- 4
Add the water a tablespoon at a time, ice-cold, until the dough just holds. It should stay shaggy.
- 5
Divide the dough in half. Flatten each half into a disk. Wrap and chill 30 minutes.
- 6
Peel the apples and slice them thin. Use a mix of tart and sweet. Toss them with the brown sugar, the rest of the white sugar, the lemon juice, the cinnamon, the nutmeg, the rest of the salt, and the cornstarch.
- 7
Roll one disk and fit it into a 9-inch pie plate. Pile the apples in. Dot them with the 2 tablespoons of butter.
- 8
Roll the top. Cut vents. Seal the edge and crimp it.
- 9
Beat the egg with the milk. Brush the top.
- 10
Bake 20 minutes at 425°F.
- 11
Lower the oven to 375°F. Bake until the bottom crust is gold and the juices bubble thick, about 40 minutes more. Cover the edge if it gets too dark.
- 12
Rest the pie at least 2 hours before you cut it.
Cook's notes
Use cold butter and ice-cold water. Mix tart apples with sweet ones. Rest the pie at least 2 hours before you cut it, or the juice runs. Stop adding water when the dough just holds.
My notes
Only you can see these. A reminder to add lemon, or hold the chile.
